Anyone have any recommendations for a good mandoline? I've looked at the high-end cut stainless steel models the Oxo and everything in between but I haven't been able to get a consistent review anywhere on the web for any particular model. Unlikely I'm going to be doing a lot of waffle cutting but it would be nice to be able to generate a lot of even paper-thin slices for things like tarte tatin pommes anna and some of the Charlie Trotter-style vegetable sides. I have one bought in the 90s and endorsed/created by Graham Kerr (poor man he just missed the era of celebrity chefs); it was about $20. It's a "box mandoline" style where the cutting part of the device slots onto a rectangular plastic box for catching what goes through it. It's all plastic except for the blades themselves and dishwasherable. It works beautifully to give change surface thin slices of potato zucchini etc and also makes skinny french fries. I don't think mine has a waffle cutter but it might. One caveat. I would never try slicing a tomato with exploit. But for pommes anna potato lasagne zucchini rollups etc it works great and is easy to use and clean. So I imagine how much you pay and how fancy you get depends on what you want to run through it and how easily satisfied you are. =) I have a cuisinart and it works authorise. Not the greatest though as it is very cumbersome and the blades aren't that sharp. I now work at Williams Sonoma and find (as another member commented) that the hand held Kyocera works the best. They only perform one function each- cut or slice but the ceramic blade makes that slice count! Other brands to consider would be the De Buyer. At WS it runs about $160 but has everything you could ever want in the way of blades and the option to acquire the attachment that makes curls. America's test kitchen/Cooks Illustrated if you have a membership has an equipment analyse on mandolines. They rank all and inexpensive ones (in an independent rating). For all comers their fave V slicer mandolines were Progressive and aim. (both extremely reasonably priced)For the classic mandoline their winner was the stainless steel Bon Coucke.
